Garlic: 5 cloves
Onion: one small
Cumin seed powder: 3/4 teaspoon
Coriander powder: 1/2 teaspoon

Salt: accordingly
Lemon juice: 1 tablespoon

First soak chickpeas for 24 hours and then drain it well. Then add finely chopped onion and green chilly, garlic cloves, coriander leaves, salt, cumin seed powder, coriander powder, black pepper, chilly powder, salt and baking soda. Mix them well.

Then put the mixture in a food processor and pulse it. The mixture should be processed into a rough consistency, and not smooth like a paste. Then pour the mixture into a bowl. Now cover the bowl tightly with a plastic wrap and refrigerate for 1-2 hours.

Once the falafel mixture is taken out of fridge, roll it into round balls with palm. Heat oil in a deep pan. Then fry the falafel balls till they turn golden brown outside. After frying well, place falafels on a paper towel to remove excess oil. Then serve the falafels fresh and hot.
