Maddur Vada from Karnataka - crispy outside, soft inside


A crunchy tea-time snack which originated from a place called Maddur

Maddur vada is a very popular tea snack, originated from a place called Maddur, a small town near Mandya in Karnataka.

Preparation: Mix sliced onion, curry leaves, coriander leaves, green chilies and salt, with a slight pressure. Press the mixture to the bottom of a thick vessel. Keep aside for about 10 minutes. Add maida, besan, rice flour, sooji, hing, butter and hot oil.



Mix well by sprinkling little water and make a slightly firm dough. Make lemon sized balls and flatten it by wrapping it. Deep fry in oil.
