'Double decker' tender coconut pudding to impress kids

Various delicacies made of tender coconut such as dessert and ice creams are very popular. Now let's try a different two-layer pudding with tender coconut.

Ingredients:



Tender coconut - 2 with pulp (at least 1 cup pulp)
China grass - 10 gram
Sugar - 3/4 cup
Milk - 1/2 litre
Water or tender coconut water - 1 1/2 cup (to melt China grass)
Tender coconut water - 1 1/2 cup (for glass layer)
Condensed milk - 1/2 cup
Vanilla - 1/2 teaspoon

Preparation:

First, wash China grass and melt it in 1 1/2 cup water. Grind tender coconut pulp well. Boil milk after adding 1/2 cup sugar and condensed milk in it. Then add ground coconut pulp and vanilla.

To make glass pudding layer, add 1/4 portion of hot melted China grass into 1 1/2 cup tender coconut water and mix well. Pour this into a mould and let it cool. Then keep it in fridge for some time.

Add coconut pulp and milk mixture into remaining melted China grass and stir well. Pour this slowly on the glass pudding. Then keep it in the fridge again.

Once it turns solid, remove it from the mould and put upside down to a plate. Serve it after cutting in desired shape.
