Try a bowl of different fried rice loaded with fresh vegetables and aromatic spices and is irresistibly delicious. This burnt garlic fried rice is easy and quick to make.


  • Basmati Rice - ½ cup
  • Water - 3 cups
  • Salt - as needed
  • Sesame oil - 2 ½ teaspoons
  • Garlic - 9-10
  • Spring Onion White - 1/4 cup
  • Carrot - quarter cup
  • Beans - 5- 6
  • Capsicum- 1 (medium)
  • Celery - 1 tbsp (optional)
  • Crushed pepper - half a teaspoon
  • Soy sauce- 1 tbsp
  • Vinegar - 1/4 teaspoon
  • Spring Onion Green - 3 tbsp

Wash and soak the basmati rice well. Drain the water after 30 minutes. Heat three cups of water in a bowl. Add salt and a teaspoon of sesame oil. When the water boils, add the rice and stir lightly. When the water gets evaporated, drain the water thoroughly. Rinse in cold water and set aside to prevent the rice from boiling again.

Now chop all the vegetables well. Take a pan and heat two and a half teaspoons of sesame oil. Add finely chopped garlic and saute. When it turns golden brown, set aside two to three teaspoons of garlic to garnish.

Now fry the rest of the garlic well. When the garlic turns dark brown, add the chopped spring onion. Stir for a minute and then add the chopped beans. After stirring for two minutes, add the remaining chopped vegetables and fry well.

Add crushed pepper and chopped celery and fry. Stir for 3 minutes and then add the soy sauce. Mix the soy sauce well with the vegetables and then add the rice. Add enough salt, vinegar and stir well. Garnish with spring onion green and roasted garlic.
